One of the things my Irishman and I really enjoyed about our 10 day detox was having soup for dinner.
Looks like 2012 is shaping up to be the year of soup for Stonesoup. Very excited about expanding the ‘soup’ section of my recipe index.
On Monday, the soup love continued with a lovely little curried cabbage soup.
Don’t let the words ‘cabbage soup’ put you off.
This is about as far from boring as soup can get. Just make sure you’re using a good quality curry powder.
curried cabbage soup
1/4 white cabbage, finely sliced
2 carrots, diced
2 sticks celery, diced
2-3 teaspoons curry powder
1-2 tablespoons soy sauce
1. Preheat a little oil in a large saucepan. Cook cabbage with the lid on, stirring every now and then for about 5 minutes while you chop the other veg.
2. Add the carrot, celery, curry powder, 1 tablespoon soy sauce and 3 cups water.
3. Cover and simmer for 15-20 minutes or until the veg are tender.
4. Taste and season with more soy or curry powder, or possibly some
